In addition to its scenic beauty, which makes it a popular tourist destination, the Sabinares del Arlanza–La Yecla Natural Park offers a diverse traditional cuisine featuring numerous recipes based on locally produced ingredients.

MEAT AND DELI MEATS

- Roast suckling lamb (Burgos PGI) (usually cooked in a wood-fired oven). 
- Roast suckling pig (common in traditional Castilian cuisine). 
- Veal prepared to order. 
- Burgos blood sausage, a sausage made with pork blood, rice, and spices. 
- Extra “Contreras” homemade chorizo, traditionally made with a fine grind and seasoned with garlic and paprika. 
- Pork-based sausages such as ham, chorizo, cecina, pork loin, salchichón, tongue, pancetta, and other sausages that are part of the region’s culinary tradition.

VEGETABLES AND HEARTY STEWS

- Olla podrida, a stew made with red beans, pork (blood sausage, ribs, chorizo, etc.), and other ingredients. 
- Sopa castellana, a broth-based soup with beef or lamb, eggs, potatoes, onions, and spices. 
- Migas: A humble but tasty dish made with crumbled bread, garlic, oil, and sometimes chorizo or pancetta. 
- Caldereta pinariega, a typical stew from the Sierra de la Demanda, which may include pork or lamb. 
- Garlic soups, a simple dish that is very popular in the region. 

PRODUCTS FROM THE ARLANZÓN RIVER AND THE DUERO RIVER BASIN, AND OTHER FISH PRODUCTS

- Crabs and trout, which come from the Arlanzón River and the Duero River basin, are widely consumed in the area, especially during the summer. 
- Roasted chicharrillo and agujas, specialties of the northwestern region (Odra-Pisuerga district), which can be served with local fried tomato sauce. 

LOCAL PRODUCTS

- Mushrooms such as chanterelles, thistle mushrooms, senderillas, boletus, and mansarones, among others, which are eaten fresh or used in stews. 
- Medina lettuce, a variety of lettuce highly prized in salads. 
- Covarrubias cherries, highly prized in the area, are small, sweet-tasting, and have a distinctive aroma. There is an annual festival dedicated to them (The Cherry Festival and the Medieval Market of Covarrubias). 

DESSERTS AND OTHER SWEETS FROM THE AREA

- Burgos cheese, a fresh sheep's-milk cheese with a smooth texture and delicate flavor. 
- Grandpa's Dessert (Burgos cheese with Silos walnuts and honey) is a very popular sweet treat. 
- Yemas de Burgos, caramelized almonds, and perrunillas (a traditional Burgos pastry made with wheat flour, butter, sugar, eggs, and almonds). 
- Torta de Aranda, a type of flatbread typical of the region. 
- Heather honey, a honey with an intense flavor produced in the area.
