- Burgos blood sausage, a sausage made with pork blood, rice, and spices.
- Extra “Contreras” homemade chorizo, traditionally made with a fine grind and seasoned with garlic and paprika.
- Pork-based sausages such as ham, chorizo, cecina, pork loin, salchichón, tongue, pancetta, and other sausages that are part of the region’s culinary tradition.
- Olla podrida, a stew made with red beans, pork (blood sausage, ribs, chorizo, etc.), and other ingredients.
- Sopa castellana, a broth-based soup with beef or lamb, eggs, potatoes, onions, and spices.
- Migas: A humble but tasty dish made with crumbled bread, garlic, oil, and sometimes chorizo or pancetta.
- Caldereta pinariega, a typical stew from the Sierra de la Demanda, which may include pork or lamb.
