The Aizkorri-Aratz Natural Park and its surroundings are synonymous with Idiazabal cheese, one of the jewels?of Basque gastronomy and?one of the best sheep cheeses in the world. The elaboration of this cheese is a millenary tradition with Denomination of Origin for more than 30 years. It took its name from the village Idiazabal, for being the enclave most associated, since ancient times, with Latxa sheep cheeses.


 


Its special flavor, balanced and intense, can be enjoyed in many catering establishments, but to learn more about the secrets of its production, we suggest you visit one of the cheese factories or go to Idiazabal to the Cheese Interpretation Center, where they give us the keys to value and taste an Idiazabal cheese.
