At Bodega Ecológica Dehesa del Zarco, we are committed to biodiversity conservation and local development in Pilas, in the Doñana region. We are a family-run, organic winery that combines wine tourism with the vineyard landscape, agricultural tradition, and respect for the land.

1. Connection to Doñana
Our operations are based in the Doñana Natural Park area, and we adhere to the European Charter for Sustainable Tourism in the region. During guided tours, we explain the relationship between organic farming, winemaking, biodiversity, and the conservation of Doñana’s natural heritage.

2. Reduced Environmental Impact
We generate our own energy using 19 photovoltaic solar panels that cover a large portion of the winery’s annual energy consumption.In addition, we cultivate our vineyards using rain-fed farming, collect rainwater for the garden and the animals, and plan to continue improving efficiency with dual-flush systems and energy-efficient equipment.

3. Biodiversity and natural heritage
We maintain permanent ground cover with over 400 herbaceous species, which helps improve soil quality, reduce erosion, and increase biodiversity.We also raise Churra Lebrijana sheep, a native breed at risk of extinction, which graze in the vineyard, naturally control vegetation, and contribute to soil fertilization.

4. Local Development
We collaborate with local associations and NGOs by donating wine for charitable, sporting, and cultural events in the Pilas area and the municipalities of Doñana. Additionally, we share our facilities for cultural activities, promote joint experiences with other local businesses, and work with agencies specializing in ecotourism and sustainable tourism.

Guided wine tour at the Dehesa del Zarco Organic Winery in Pilas (Seville), located within the Doñana Natural Park. This activity is one of the company’s flagship offerings and serves as a direct link between visitors, the wine-growing landscape of Pilas, and the natural heritage of Doñana.

The tour begins with a guided visit to the organic vineyard, where the sustainable management of the soil and the vegetation cover—comprising more than 400 species—is explained, the use of solar energy for production, and the integration of the native Churra Lebrijana livestock breed—which is endangered—as part of the ecosystem’s natural balance. Visitors can observe firsthand how the estate combines wine production with biodiversity conservation and the circular economy.

The tour then continues in the winery, where the different stages of the winemaking process are detailed, from grape selection to final bottling, highlighting the use of efficient machinery and clean energy. This phase highlights the artisanal aspect of the work and the importance of quality control at every stage of the process.

The experience culminates in the tasting room, where guided tastings of organic wines paired with selected local products are offered.
