This activity is one of the company’s flagship offerings and serves as a direct link between visitors, the wine-growing landscape of Pilas, and the natural heritage of Doñana.<br><br>The tour begins with a guided visit to the organic vineyard, where the sustainable management of the soil and the vegetation cover—comprising more than 400 species—is explained, the use of solar energy for production, and the integration of the native Churra Lebrijana livestock breed—which is endangered—as part of the ecosystem’s natural balance. Visitors can observe firsthand how the estate combines wine production with biodiversity conservation and the circular economy.<br><br>The tour then continues in the winery, where the different stages of the winemaking process are detailed, from grape selection to final bottling, highlighting the use of efficient machinery and clean energy. <p>The Ardea Purpurea Lodge Restaurant, which has been consecutively recommended in the Michelin Guide since 2012, is located next to the Doñana Natural Park in Villamanrique de la Condesa (Seville). The menu features veal and Iberian pork, Almadraba tuna from Barbate, salads, homemade desserts, and—as the house specialty—rice dishes.<br><br>Among the appetizers: assorted smoked toasts (anchovy, sardine, and salmon), acorn-fed Iberian ham, acorn-fed Iberian pork loin, a cheese platter, duck foie gras in two textures, and an assortment of homemade croquettes with a quail egg sauce. Salads and scrambled eggs with produce from the garden and seafood. Rice dishes (minimum 2 people) in various styles: oxtail, duck, seafood, carabineros, and porcini mushroom risotto.<br><br>From the sea: white shrimp from Huelva, jig-caught squid with Parisian-style potatoes, signature cod on spiced hummus, charcoal-grilled octopus, assorted Barbate almadraba tuna, skewered hake, sea bass, squid tagliatelle with black rice, scallops, and grilled wild sole.
