At Raíces Restaurant, we are committed to preserving biodiversity and supporting local development in Istán, in the Sierra de las Nieves region. Our cuisine draws inspiration from the local area and its culinary heritage, offering a dining experience that introduces visitors to the region’s flavors, producers, and landscapes.

1. Local Produce and Tradition
We work with locally sourced, zero-mile products, highlighting traditional ingredients and preparations such as goat meat, olive oil, and artisanal bread from Algatocín.
When explaining the menu, we share the local origins of the products and their connection to the culinary culture of the Sierra de las Nieves, and we also offer the opportunity to purchase some of them, such as olive oil.

2. Reduced environmental impact
We implement an internal policy to reduce food waste through responsible management of purchasing, storage, and utilization of products.
We also use ozone cleaning, energy-efficient LED lighting, biodegradable plastics, approved reusable containers, and bulk formats with refillable dispensers.

3. Conservation and the local area
Our restaurant is located in Istán, within the Sierra de las Nieves Biosphere Reserve, and our menu is designed to highlight the region’s traditional resources and crafts.
In doing so, we strengthen the connection between gastronomy and the landscape, helping to ensure that the visit has a broader meaning than just the culinary experience.

4. Local Development
We are committed to local employment, with 12 of our 13 employees hailing from the region itself, and we collaborate with nearby suppliers and businesses.
Additionally, in the improvement plan scheduled for 2029, we aim to further strengthen communication regarding the origin and traceability of our products, as well as create synergies with the destination and complementary experiences

A restaurant located within the Istán sports complex (Camino del Nacimiento), in the heart of the Sierra de las Nieves Biosphere Reserve and National Park (Málaga). Seating for 96 guests indoors and 120 on the terrace. A team of 13 people, almost all from the local area

Its culinary concept combines seasonal ingredients with contemporary techniques, seeking to highlight traditional flavors with creative touches. The menu focuses on locally sourced ingredients: goat meat, local olive oil (also available for purchase), and artisanal bread from Algatocín, with an explanation of the local origin of each dish provided as an integral part of the dining experience.
