Amid vineyards situated at an altitude of 950 meters, visitors discover how the elevation, the clay soil, and the temperature contrast between day and night give each grape its own unique character.
- The tour varies by season: in spring, visitors learn about grape varieties and the vine’s growth cycles; during harvest, they taste the grapes straight from the vineyard, gaining an understanding of the fruit before it becomes wine.
- The tour continues in the cave cellar, a space dug into the earth that naturally maintains the optimal temperature year-round thanks to its natural climate control. There, José María passionately explains the winemaking process for his white and red wines, combining technical precision with artisanal sensitivity.
