Esencias de Urdaibai 5 txakolis
The dominant view over the Urdaibai Biosphere Reserve allows us to locate points of heritage interest such as Santimamiñe, the Castro de Arrola, Gernika, the mouth of the estuary and its beaches, the Roman settlement of Forua, the Bizkaia Bocineros Mountains (Oiz, Sollube, Gorbea and Ganekogorta) as well as the borders of Bizkaia in Orduña and Sabigain (Urkiola).
In this place we interpret the fishing and agricultural tradition of the Reserve and its relationship with the seasonal cuisine that combines with the Txakoli produced in the area.
The management and work of the vineyard is explained, based on the native Hondarrabi Zuri and Hondarrabi Beltza varieties and the foreign Riesling, linked to a soil with defined and uniform characteristics, and its conformation of plots based on its orography and orientation, to produce grapes in a sustainable way and closely related to the surrounding flora and fauna, allowing the development of native species such as oak, chestnut, ash, holly, arbutus, laurel, oak and other relict species that exist in the vineyard environment.
In the winery, the work carried out in the handling of the grapes and their musts to obtain a Txakoli with aging capacity over the years is explained.
Finally, the tasting takes place, with a tasting of five of our Txakolis and local products from artisan producers in the region: salted anchovies, tuna belly in olive oil, tuna in olive oil, Idiazabal cheese, farmhouse bread baked in a wood oven, lemon sorbet with Txakoli, and coffee/infusion, which are the perfect accompaniment to the Txakoli.
A privilege for the senses, exclusive, sustainable and unique.

Oven pack

The experience combines different elements of interest: nature observation, ethnography and local history, adventure... through a compendium of activities that begin in the center of the village, next to its five emblematic calcination furnaces, followed by a hiking route that leads to some old iron mines in the process of naturalization. The guide explains not only the mining past of the area, its microtoponymy, customs, history and the transformation from a pre-industrial society to an industrial society at the beginning of the 20th century, but also the transformation from a pre-industrial society to an industrial society at the beginning of the 20th century. It also focuses on the process of natural regeneration in the old mining grounds, which has given rise to the existence of a great variety of mosses and ferns, including the luminescent moss Schistostega pennata, commonly called elves' gold, which is in danger of extinction. The experience has elements of adventure, such as access to the only mining gallery open to the public in Galicia, where the various speleothems (stalagtites, stalagmites, columns, pisolites...) are explained and observed, as well as some small horseshoe bats resting in the nooks and crannies of the rock. People who wish to do so, can save part of the route by jumping on the largest zip line in Galicia, which rises above the Turía River and connects the slopes of the mines. Children can also enjoy, at the end of the route, a children's forest with mini zip lines among the trees. This activity includes a guided visit to the zip line, with entrance to level zero of the Consuelo Mine. Approximate duration: 2.5 hours.

Bear watching in Somiedo
In Somiedo Experience we will teach you about the habits, behavior and conservation of the Cantabrian Brown Bear in its incredible natural habitat, inside the Natural Park of Somiedo, while you enjoy a walk through beautiful trails where the plant and other wildlife walk.
We also want you to become aware of the values and the biological richness of this natural space, how important are the conservation work with which we collaborate, and how thanks to them the brown bear is still alive; How thanks to them the brown bear is managing to survive in the mountains and increase its population during these last years.
In Somiedo nothing can be planned. Everything we see will depend on the behavior of the fauna and the weather at the time.
In each outing we do about two hours of sighting with binoculars and telescopes, and an interpretive walk of another two hours.

Tour through the Natural Park of Ponga to identify the natural and historical factors that have led to the abandonment of the countryside to convert this council, despite being a short distance from the most visited areas of the region (Picos de Europa, Llanes), in the least densely populated of Asturias. Throughout the experience we visited the Beyos Gorge, Casielles, Sobrefoz, the viewpoint of Les Bedules and Sobrefoz with special mention to the Regional Tourist Interest Festival of the Guirria that, paradoxically, arises to ensure the productive and reproductive heritage of the local community. Analysis and interpretation of the landscape, review of the state of the architectural and ethnographic heritage and proposal for strategic planning of tourism through the territorialization of ecotourism activity (scientific tourism).

Beekeeping in Liébana

Do you want to be a beekeeper for a day? this experience allows you to do it. The activity begins with an explanation about the place where we are, the beekeeping tradition in Liébana and a summary of what the activity will consist of. The short walk to the apiary will allow us to observe the flora and fauna of the place. Several species of birds and with a bit of luck squirrels, foxes or roe deer can be spotted along this peaceful 500 meter walk through the trees. Once in the apiary, we will dress up in beekeeper's costumes, proceed to open a beehive and interpret the way of life and the cycle of the bees. Once the visit to the apiary is over, we return to the extraction room where we explain the process of extraction and packaging of honey and end with a tasting, thus concluding this enjoyable experience of about 2 hours and a half composed of an agri-food visit that includes a walk through nature, observation of the flora and fauna and knowledge of the environment and a local product.

Meila

The meilares have been very common wild apple trees in the mountains of Liébana, but during the last thirty years they have practically disappeared. Years ago the meilas were harvested, which were highly valued for the production of cider, mainly in Asturias, a neighboring community, as they provided bitter nuances that were appreciated in apple fermented products. With the passing of time, the harvesting and care of the tree was abandoned because of the low yield and little by little they have been disappearing. This activity proposes the recovery of the meilar in the bush and thus contribute to the conservation of biodiversity. The meila is the wild apple of Liébana, is small in size and although it may have other nuances, mainly its flavor is bitter. The meilares are trees that can reach a large size, which grow in forests and can share space with other trees and shrubs in the environment. It contributes to the feeding of wildlife, such as brown bears, deer, deer, wild boars, rodents, etc. and many birds; all of them, in turn, can collaborate for the growth of new meylars by moving the seeds from one place to another. This can start a chain that recovers the meadows in the mountains, contributing to the diversification of flora and fauna. The planting of fruit trees is carried out during the spring, but prior to planting we must carry out several tasks: location of the meilar and cleaning of the area, planting of the meila seeds in seedbed, transplanting from seedbed to pot, planting of the meilar, protection of the tree, care: fertilizing, watering if necessary and pruning, periodic visit and data collection, harvesting. We will explain this and much more during the activity, which is focused on the observation of the plant species typical of the area and demarcation and tillage for the planting of a meilar and its subsequent care. We will start with the planting of meylars in a farm adjacent to our farm, we will identify each tree with a code and periodically send the information with photographs and other data to all those who have contributed to the experience if they wish.

Guided tour of the Sierra del Oso distillery

Visit in which we will learn how wine is distilled in the traditional "alquitara lebaniega". We will see the different steps in the elaboration and aging of wine, orujo and liquors (fermentation, distillation, aging...) and we will also see the different vineyard planting frames. From the vineyard, there will be an interpretation of the Lebania landscape, with the imposing Picos de Europa in the background. If we are lucky, we can observe the abundant fauna that inhabits the environment (roe deer, deer, wild boar, eagle, buzzard, etc.).

And if not, we will surely see the traces of their passage through the vineyard (footprints, eaten or scavenged vines, pecked grapes, etc.). At the end of the visit, we will taste the wines and liquors that we produce along with local products (cheese and sausage in the morning or sweets in the afternoon). This tasting is commented, analyzing the sensations that we perceive with our senses, sight, smell and taste. Sierra del Oso is committed to the recovery and enhancement of old vineyards, as well as expanding its plantations to maintain the link with the territory and local employment.

We also collaborate with scientific ecotourism through the Brown Bear Foundation, a foundation closely linked to the territory and committed to a species present in our mountains.

The "millenary" chestnut trees of Apellániz. Izki

Apellániz is located in the Izki Natural Park, the heart and lungs of Montaña Alavesa. In 13 of its 13 hectares grows the best preserved chestnut grove in the Basque Country. Through this experience we will visit the chestnut trees -some of them millenary-, in a magical place, full of stories and legends, mythological beings and a great diversity of flora and fauna. We will carry out planting, grafting, pruning and harvesting work, learning how to manage the chestnut grove for its protection and conservation.
In its 1,500 hectares of forest oak, beech and heather, but if there is a charismatic tree and loved by its inhabitants that is the chestnut tree. With 13 hectares in which live 1,100 chestnut trees scattered in a strip that delimits the village on its western side, they protect it from the wind and offer shade and shelter.

In a fair that takes place annually in mid-October, its people honor these giants with whom they have lived together since time immemorial. Centenary trees, even millenary, of more than eleven meters of circumference are majestic in any of the roads that from Apellániz go into the forest.

It is especially in autumn when these places offer us their best clothes. A palette of ochre colors that start from greens, followed by yellows, oranges, reds to reach the browns. An explosion of shades that intoxicate the eyes of the observer who looks in silence.

Without forgetting the culinary delicacy they offer us: chestnuts, whose aromas while roasting transport us to our tenderest childhood evoking sensations and memories difficult to describe in words, but always pleasant and with a certain longing.

The great majority of all this work is carried out by the people of Apellániz, who get together when the chestnut grove demands it and carry out the maintenance work, all in a great atmosphere, as their effort is matched by the evolution of the chestnut grove. Always culminated in the heat of a fire and a good lunch that lasts until the afternoon.

A day in which the neighbors and the neighbors of Apellániz are proud to make known their chestnut grove, their culture, their customs, their traditions, the values that their ancestors knew how to acquire, to take care, to conserve and to transmit. A legacy that they are proud to have rescued, valued and transmitted. A knowledge that other communities can use to recover that ancestral heritage that was so hard to achieve, that is also hard to lose and that is worthwhile because it creates links, unions and synergies that go beyond the borders of our environments.

We will learn to care for and respect our environment and its inhabitants.

The singular point of this experience with respect to others is to observe a living being, an insect: the bee, whose structuring of the hive is a perfect example of teamwork, organization of space and distribution of tasks, where the common good prevails above all. To be able to enjoy a bee colony whose simple allusion awakens in humans and especially in children a somewhat magical and mysterious fascination. To be able to see firsthand the inside of the hive in which there are three castes: the queen, the workers and the drones. The queen, mother of all the members of the hive, lays about a thousand eggs a day. She can live up to five years feeding exclusively on royal jelly. To be able to catch some drones, destined exclusively to procreation and that in autumn when the food begins to be scarce are pierced by the stings of the workers. To feel the workers, the most numerous of the hive, being able to reach 90,000 in summer. They live about 45 days in summer and about six months in autumn and winter. They are in charge of caring for and feeding the brood, building honeycombs, carrying pollen, water and nectar. They also clean and protect the hive. Participating for a few moments in the hive management plan, which consists of individualized monitoring of each hive throughout the year in order to attend specifically to the needs that arise. It can be summarized in a first spring period in which the hives are placed as they are required. During the summer, swarming is controlled. At the end of the summer period, the honey supers are removed. With an autumn revision in which their reserves are checked, the beekeeping year is concluded. All this is shown from the deep respect for nature and the environment that we must transmit to the new generations.

The world of bees revolves around the weather, the climate. Bees live depending on the sun, the rain, the temperature, the wind, and so while sunny and warm days are favorable for their visit, cold, windy and rainy days are not advisable. Therefore, the experiences will be organized depending on the weather. In rainy and/or cold weather the visit to the apiary in the natural park can be made, but it is impossible to access the inside of the hive because in these circumstances the bees are very aggressive and it can be painful to do so.

This experience gives the visitor the option to participate from the very first moment. As soon as you arrive in Apellániz and find yourself immersed in a place where its buildings evoke other times, the traveler's curiosity will be aroused. Likewise, the natural environment that surrounds this enclave with its majestic beech forests and enigmatic chestnut groves will provoke in the visitor the need to ask about its origins and singularities. On the other hand, the talk in which the experience is contextualized gives rise to multiple questions about the world of bees on which the essence of the experience revolves. The transfer to the apiary in which we will cross the interior of one of the most beautiful natural parks of the Basque Country and whose transit is restricted to road traffic will be another of the key moments of questions. The visit to the apiary, for most of the participants will be a new, unique, unrepeatable experience and why not, in a way, disturbing to be surrounded by millions of bees. The look inside a beehive where we will discover the ins and outs, curiosities and mysteries of the life of the bee will probably offer the most participatory moments of the experience and will create a memory difficult to forget. The subsequent return will give much to talk about exchanging sensations and emotions. We therefore understand that any moment of the day should be conducive to the participation of the visitor, as we must not forget that it is the visitor, the traveler, and his or her enjoyment, after all, the fundamental axis on which our work and our participation in this initiative revolves. It is therefore their participation that is fundamental, as it will determine whether this experience will be positive, rewarding and long-lasting.
We understand that the essence of this experience is the world of sensations, seeing, smelling, hearing, tasting and thanks to them the traveler will fix the concepts that from the first moment the guides will try to transmit throughout the morning.

In principle, this experience is focused on the traveler observing the natural world, the world of bees. This means that the places where we will find ourselves will lack human presence, which is on the other hand one of the attractions of the visit. As the village of Apellániz is small, the presence of neighbors is scarce. The guides of the experience as natives of the region will be in principle the representatives of this local population. At lunchtime visitors will be able to interact with the locals. Although, as we have already mentioned, the traveler looking for this type of experience will see the relative solitude of the place as an incentive.

Sobrón and the magic of water

The Sobrón and the magic of water experience consists of a visit to the Sobrón Water Museum, an interpretive tour of the Ebro Gorge and a water tasting. All in the spectacular setting of the Valderejo Natural Park. First we will make a guided visit to the Sobrón Water Museum. In it, and through the thematic areas of the Museum, we will discover the importance of water as a nexus of all living things. Through water we will unravel concepts such as biodiversity, climate change, desertification or health. We will continue with the aquatic experience with a circular walk of approximately one hour through the impressive Ebro Canyon. This is a path that goes into a riparian forest with a great diversity of fauna and flora and a great scenic beauty, always on the banks of the great Ebro. Near the end of this tour we will visit two springs located in two caves. These springs were the reason for the existence of a lavish spa that was built in this magical gorge back in the nineteenth century. We will discover the few remaining vestiges of that pharaonic Sobrón Spa and its bottling plant. Little is left of it, but the little that remains is the most important. There are still the two springs of mineral-medicinal waters with which thousands and thousands of our ancestors were treated. We will try the water from the Sobrón spring, with diuretic and curative properties, especially beneficial for the urinary system, and the water from the Soportilla spring, with digestive properties... Because water is magic. And Green Spain is that color thanks to the relative abundance of the liquid element compared to other neighboring regions. It is our duty to preserve it in the necessary quantities and quality.

The art of liquid gold

This ecotourism experience takes place in Casa Martín, in the town of Fondos de Vega, Degaña; municipality integrated in the Natural Park of Fuentes del Narcea, Degaña and Ibias and close to the Muniellos Forest. The region stands out for being home to one of the richest plant and animal communities in Europe.

The experience starts with a contextualization of the local, cultural, socioeconomic and environmental environment in which we find ourselves and in which traditional beekeeping has had, throughout history, a prominent role, favoring the integrity of the ecosystem and the welfare of the local community.

In a first contact with this millenary profession, we will deal with the importance of the cortines (circular construction with high walls, typical of bear areas) and we will expose a trúebano (beehive made from a tree trunk) characteristic of the area. By means of a glass observation hive, we will observe the different inhabitants of the hive (queen, drones and workers), their characteristics, organization, behavior and structure within the hive, as well as the importance of the bee in the environment through the pollination process, promoting biodiversity and the guarantee of nutritious food.

Finally, visitors will be able to approach the different products of the beehive through their senses: honey, wax, pollen and propolis. Through a tasting they will be able to feel, smell and taste these products and other derivatives such as honey cookies or jams with honey and km 0 fruits. Honey has a great variability in terms of colors, flavors and textures that gives it identity and depends on the floral variety or type of nectar collected. The botanical characterization of our honey will be discussed.

This experience is a journey into the beekeeping profession and a tuning of the senses through the tasting of the products offered by the beehive, from the responsible commitment to the conservation of the natural environment and environmental and cultural awareness. We will conclude with the participation of the attendees in a dramatization of the beekeeping profession.

Walk on the waters of the Minho

Boat trip with wine tasting and local product in a traditional winery. The crystal clear and calm waters of the river Miño in spring as it passes through the Ribeira Sacra are tinged with the green of its banks, a monochrome landscape dotted with white cherry blossoms, in summer its multitude of tributaries put music to the silence and in autumn everything becomes multicolored with deciduous trees and vineyards before reaching the vegetative stop.In autumn, everything becomes multicolored with deciduous trees and vineyards before the vegetative stop announcing the winter. All blessed by the multitude of churches and wineries on the slopes of Padre Miño. To enjoy the best views we are located in the middle of the river where sometimes we have to stop before the passage of settlers such as otters, roe deer, squirrels, etc. Of course if we look at the sky we will see other companions such as eagles, kites etc.. Before so much forest and vineyards it is inevitable to go to the Ecosacra Winery at the foot of the river to taste the excellent wines and local products.
